Le Due Spade – Trento – Italy
Trento is located in Trentino Alto Adige & represents an important college Town in Italy. Trento is famous for wine (please consider that Ferrari is one of the best sparkling wine in Italy & is produced in Trento), for apple orchards & for the important historical monuments like Buonconsiglio Castle (Link), the cathedral of Saint Vigil (Link) & Church of Saint Lawrence but also for towers & very beautiful historical buildings around the city. About The restaurant, Le due Spade (two shadows, in English) lost its one Michelin guide star but I think that this restaurant is really interesting for two main reason: 1st for food, 2nd for the location.
I’d like to start from the second point of view because “le due spade” is located near the Trento Cathedral & from the “inside point of view” this restaurant is a small, cosy "stube" - a wood panelled room with an antique green majolica stove from the Valley of Non, and eight elegant laid tables. This restaurant is really romantic with very good food & a special atmosphere considering also that this place is born in 1545 to give hospitality to Council of Trento Members, nobles, pilgrims and other travelers.

The gourmet’s choice of the Trentino
Walnut patty with duck speck and Vezzena cheese crème brulée
Wild mushroom cream soup with small “canederli” dumplings and crispy speck
Ravioli of potato and 50/50 cheese with black truffle.
Sorbet of elderflowers
Larded breast of pheasant and chestnut purée with “Marzemina” grape sauce
Autumn season dessert: quince strudel, kiwi and ricotta cheese mousse, pumpkin and apple tartlet
Wine: Franz Haas – Pinot Nero - Link - Please consider that Franz Haas is one of the best local winery!
Everything looks & is really ok, in particular I can suggest Duck speck, Ravioli & Elderflowers Sorbet.
Le Due Spade is a very inteteresting place to eat local cuisine "revisited" with a creative flair, obviously based on seasonability foods but also because offer an opportunity to take a look to the very beautiful Trento Cathedral!
